OAMC- Apple Squash Soup

OAMC- Apple Squash Soup

1 large onion
1/2 tsp rubbed sage
2 TB butter
14 oz chicken broth
3/4 c water
2 medium Granny Smith apples (or any tart apple), peeled and chopped.
12 oz frozen mashed squash, thawed
1 tsp ground ginger
1/2 tsp salt
1/2 cup milk

In sauce pan, saute onion and sage in butter for 3 min or until tender. Add broth, water and apples, bring to a boil. Reduce heat, cover and simmer 12 minutes. Add Squash, ginger and salt. return to a boil. Reduce heat, simmer, uncovered for 10 minutes. Cool until lukewarm. Process in batches in blender until smooth; return to pan. Add milk, heat thru. Do not boil. Cool and package to store in freezer. Quart jars work well.

Tips:
Remember to leave some empty space in the jar, for expansion as the liquid freezes.
To label the jars, I make paper labels from scrap paper and secure to the jar with a rubber band.
