OAMC for the pantry- Fruit Filled Muffins

1 1/2 cups flour
1/3 cup sugar
1 tsp baking powder
1 tsp cinnamon
1/4 tsp baking soda
1/8 tsp salt

Combine ingredients and place in glass quart jar. Attach label which says the following:

In small bowl, combine the following:
*2/3 cup buttermilk
*1 egg
*3 TB oil
Add to contents of this jar. Stir until just moistened. Spoon batter into muffin cups, filling 1/4 full. On top of each, place
*1 tsp of spreadable preserves (apricot, peach, raspberry, etc).
Top with remaining batter. Bake 400 degrees for 18-20 minutes.

Tips:
If you do not have buttermilk, you can use plain yogurt thinned to the right consistency with milk. Or, you can make “sour milk” by putting 2 tsp of lemon juice or vinegar in a measuring cup and adding enough milk to make 2/3 cup. Stir and let stand for 5 minutes and then use
I use some wheat flour in every recipe. If you use too much the muffins turn out too dense. Usually I do about 1/3 wheat and 2/3 white.
