OAMC for the pantry- Pancake Mix
In a quart jar, combine the following:
1 c flour
2 tsp sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
attach a label which says:
To prepare:
In small bowl, mix
* 1 c buttermilk
* 2 egg whites
* 1 TB oil
* 1/2 tsp vanilla
add contents of jar. Stir until moistened, batter will be lumpy. For each pancake, pour 1/4 c batter on griddle. Cook 2 min on each side.
Tips:
I usually use some wheat flour in this recipe. Too much will make the pancakes dense, so I usually use 1 part wheat to 2 parts white four.
If you do not have buttermilk, you can use regular milk, plain yogurt thinned with milk or make your own sour milk with a few tsp of lemon juice (let sit for 5 minutes before adding).
