Geetle and Pookie’s Gingerbread Cake Recipe

We made this recently and Geetle was sad to find out that I gave 1/2 the cake to Aunt Shel. Geetle says “we need to make more of that cake.” In case you want to make some too, here is the recipe:

1 1/2 c flour
1/4 c sugar
1 tsp ground ginger
1/2 ground cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 c water
1/3 c molasses
3 TB butter, melted
2 egg whites

Lightly coat a 8×8x2 inch pan with cooking spray. Dust with flour.
In large mixing bowl, combine flour, sugar, ginger, cinnamon, baking powder, baking soda, and salt. Add the water, molasses, butter and egg whites. Beat with electric mixer on low speed until mixed. Beat on high speed for 2 minutes. Pour into pan.
Bake in a 350 degree oven for 20 minutes.
Serve with Cool Whip!
